Fastastic Macro Friendly Meatloaf

A couple of weeks ago, my friend Mahendra texted me a meatloaf recipe. At the time I was working on a protein fluff recipe, so I shelved it. Well, last week I finally came back to it and I am I glad that I did! It was incredible how simple it was to make and good it turned out. Whahaha! Not only do I now have a great meatloaf recipe [that I am also sharing with you], but I had a food that I can ear year round, regardless of my fitness goals.


In all honesty, I did make a few of my own substitutions. The original recipe called for ground turkey and I used 93/7 lean ground beef. But if you wanted to drop the fat a little bit more, ground turkey should work just fine. I think 97/3 lean ground beef would also work. It's just a little harder to find at your average grocer.

Aside from the sauteed onion, I think the sauce is really where a lot of the flavor for meatloaf comes into play. Personally, I like Sweet Baby Ray's Sweet & Hor BBQ sauce. But feel free to use whatever your preference is. Mahendra told me that he used a Walden Farms BBQ sauce that knocks most of the carbs out of this dish. 

Ok, ok, enough of the chit chat... here's the recipe!

Ingredients


  • 1.25lbs 93/7 Lean Ground Beef
  • 1/2 Cup Seasoned Italian Breadcrumbs
  • 1 Large Onion
  • 1 Large Egg
  • 1tbsp Extra Virgin Olive Oil
  • 1tbsp Ground Basil
  • 1/4tsp Salt
  • 1cup Sweet Baby Ray's BBQ Sauce

Directions

  1. Preheat the oven to 350-degrees F. 
  2. Chop up the onion and saute in a pan with the olive oil until slightly carmelized.
  3. Combine the onions and the remaining ingredients (except for the BBQ sauce)  in a bowl and work together until well integrated.
  4. Shape the mixture into a prepared bread pan and bake at 350-degrees for one hour.
  5. Let it cool for 10min after taking it out of the oven.
  6. Add BBQ sauce and devour.
