Seriously Healthy Shrimp Enchiladas
As some of you might know, I am currently doing a brief fat cutting period. And that means going through a caloric deficit period. However, just because I am consuming fewer calories, that doesn't mean I can't still eat the foods I love. And I love enchiladas! And what's more is that you will love these enchiladas for being low in carbs and fat but packed with protein and flavor!
Originally, I was thinking of doing a green enchilada crock pot recipe. But then I realized that enchiladas shouldn't take all day to cook, so I decided to go with a baked enchilada. I picked shrimp because my girlfriend only eats seafood meats. But that's completely fine with me since I love seafood.
My girlfriend is also on a diet right now. So, we both want something that's not too calorie dense. This recipe fit the bill perfectly! And the taste? Oh yea! What did you expect? These are enchiladas we are talking about!
Whether you are prepping for a contest, watching your weight or just in the mood for a guiltless pleasure. These enchiladas are a great meal!
Ingredients
- 8tsp Old El Paso Taco Seasoning
- 12oz Peeled Shrimp
- 2cans Original Rotel
- 4/3cup Kraft 2% Mexican Cheese Blend
- 2tbsp Reduced Fat Butter
- 8oz Enchilada Sauce
- 8 Market Pantry Low Carb Tortillias
Directions
- Preheat the oven to 350 degrees F.
- Spray a casserole tray with fat free cooking spray.
- In a skillet or a large pan, melt the butter.
- Add the shrimp into the pan with the butter and lightly saute them.
- Add about 1.5cans of Rotel and the taco seasoning into the pan with the shrimp and mix.
- Lightly coat the bottom of the casserole pan with enchilada sauce.
- Warm a tortilla in the microwave.
- Coat each side of the tortilla with enchilada sauce.
- Stuff the tortilla with the mixture from the pan and sprinkle some cheese on top.
- Fold over the tortilla in the casserole pan.
- Repeat steps 7-10 for the remaining 7 tortillas.
- Cover the 8 tortillas in the casserole pan with enchilada sauce.
- Sprinkle the remaining cheese on top.
- Bake for approximately 15min until cheese is melted.
- Remove from the oven and garnish as desired.
