Chocolate Peanut Butter Pudding Protein Pie
If you can get past the tongue twister name, this is one delicious pie. Actually, I think this is my most delicious no-bake recipe ever. It's got chocolate, peanut butter and a crunchy nutty crust. It tastes sinful but it's rather tame by comparison to most other desserts. And did I mention that it's also packed with protein? If you were looking for some peanut butter and chocolate protein awesomeness then your search is over! This pie is exactly what you want.
I came up with this recipe after I bought a box of Quest bars. As you probably already know, the only way to eat a Quest bar is by heating it up first. But what happens when that Quest bar cools down after heating? It becomes hard. And if you break a piece off? It's crunchy. So I thought, "What a great idea for a pie crust!"
I got the idea for the top yesterday when I tried to mix two scoops of Gaspari Chocolate Peanut Butter Myofusion, some PB2 and a little chocolate pudding mix with milk. I topped off a 24oz Magic Bullet mixing cup with water and it was still like drinking batter. As I was choking it down, I got another idea, "If this stuff was any thicker, it might make a pretty good pie filling." But instead of a pie filling, I made a pie topping.
After I finished the recipe, I tried a little. The verdict? Amazing! The crunchy bottom perfectly complimented the soft chocolate peanut buttery top. I literally had to stop myself from eating the entire thing in that sitting.

Pie Crust Ingredients
- 1/2cup Finely Chopped Walnuts
- 2 Chocolate Brownie Quest Bars
- 5tbsp Peanut Butter
Pie Batter Ingredients
- 2scoops Chocolate Peanut Butter Gaspari Myofusion
- 1.5servings Jell-o Chocolate Pudding Mix
- 2tbsp PB2
- 1cup Skim Milk
Pie Crust Directions
- Pull the Quest bars apart into tiny pieces
- Mix the Quest bars, the nuts and peanut butter together in a pie dish
- Microwave the pie crust ingredients in the pie dish for 1minute
- Quickly whip all the pie crust ingredients together and press against the bottom of the pie dish
Pie Batter Directions
- Whisk all of the batter ingredients together in a large bowl
- Pour or spoon the batter on top of the pie crust
- Refrigerate for at least 1hour
