A Healthier Kosmic Karma Pizza

One of my favorite pizzas of all time is the Kosmic Karma pizza at the Mellow Mushroom. My girlfriend and I describe this pizza as "baked crack" because that's how awesome and addictive it is. For those of you who have never experienced the mouthgasm of the Kosmic Karma at Mellow Mushroom, you are in for a treat today! Because that's what this recipe is all about! But with this recipe, you can eat about half a pizza for the amount of calories in one slice of the original Mellow Mushroom Kosmic Karma.

Originally, I was going to try a spicy shrimp and rice recipe (which is still in the queue, by the way). But when I was at the grocery store and saw 9-grain pizza dough for sale, shrimp and rice had to wait. It was pizza time! So, I thought to myself: self, "What's the best pizza you could possibly make?" And then I responded, "What a stupid question. You know it's gotta be the Kosmic Karma!" 

The Kosmic Karma has a lot of great things going for it. It's got pesto, feta, and a red sauce base. There's also no meat on the Kosmic Karma, so it's fine for vegetarians and it's also great if you want to add your own meat. Ah, yes, the Kosmic Karma. And with only a fraction of the calories of the original Kosmic Karma, I can eat half a pizza and not worry about blowing my diet out of the water. This is my kind of pizza!



Ingredients

 
  • 1lb 9-grain Pizza Dough (or any multi-grain pizza dough)
  • 1/2cup Marinara Sauce (I use arrabiata sauce)
  • 1.5cups Reduced Fat Mozzarella Cheese
  • 1oz Reduced Fat Feta Cheese
  • 1/4cup Pesto
  • 1/4cup Chopped Spinach
  • 2 Compari Tomatoes
  • 1oz Sun Dried Tomatoes
  • 1tbsp Reduced Fat Butter

Directions


  1. Preheat the oven to 400-degrees.
  2. Mix the spinach in with the pesto.
  3. Slice the compari tomatoes.
  4. Roll, stretch or toss the pizza dough and place it onto a standard size pizza pan or shape it into a large square baking dish (if that's your thing).
  5. Add the marinara sauce and spread it into a thin layer.
  6. Cover the top of the pie with mozzarella cheese.
  7. Sprinkle the feta cheese on top.
  8. Add the spinach and pesto mixture on top of the pie.
  9. Decorate the top of the pie with the compari and sun dried tomatoes.
  10. Bake until the cheese is melted and begins to turn a golden brown (about 15-20 minutes).
  11. Remove the pie from the oven and brush the crust with butter.
*Note: try adding a little grilled chicken to the top if you want to bump up the protein
