Dark Chocolate Peanut Butter Protein Mug Cake
If you have been following facebook.com/AllNaturalMuscle then you would know that I have tried (and failed) to make a decent mug cake for months. But each time I failed I learned a few things. And gradually my mug cake got better and better. And now it is so good that it's ready for prime time on allnaturalmuscle.com.
This is the mug cake to end all mug cakes. It's marcos are really good. And it's packed full of dark chocolate peanut butter goodness! As in "Oh my goodness!"
The first time I made a mug cake, I used a ton of ingredients. That turned out to be a bad idea. I thought that each ingredient was adding something. But each additional ingredient really just overcomplicated a recipe that should have been simple. I mean, it's in a mug, right?
The second time I made a mug cake I dropped a few ingredients. And most importantly, I left out eggs (and egg whites). Why? Well, egg whites, eggs and egg substitutes made the result much more spongey than I wanted. Apparently, this is a common mug cake problem. Heck, whey already gets a little spongey when cooked. I didn't need any more help.
The final time (and what this recipe reflects) I streamlined the ingredients, I left out eggs, and I kept the liquid components relatively low. And most importantly, I didn't overcook it. The thing about a mug cake is that like many things microwaved, it doesn't always cook evenly and it has a tendency to get dried out and chewy. Who the f* wants a chewy mug cake?!? Not me! It's much better to have a little softness and gooeyness than to have any rubberiness, chewyness or dryness. Lesson: better to be a little undercooked than one bit overcooked. And as it turns out, I like it a little gooey, which is part of the reason why I included peanut butter. Because when it melts in the middle and runs over the top... damn! Just damn!

Ingredients
- 1scoop ON Gold Standard Whey, Coffee Flavor
- 12g Hershey's Special Dark Pudding Mix
- 1/2tsp Baking Powder
- 1tsp Coconut Flour
- 1/4cup Skim Milk
- 1tbsp Dark Chocolate Dreams Peanut Butter

Directions
- Mix everything (except for the peanut butter) together in a mug.
- Add the peanut butter to the top and push it below the surface until covered.
- Put the mug in the microwave for 30-45sec (remember my warning about overcooking).
- Eat it right out of the mug. Destroy & enjoy!
