Quest Bar Chocolate Brownie Cupcakes
Once I saw the Quest Bar Molten Cupcakes recipe on Mackenzie's Clean Eats, I knew I had to try it. It looked awesome and it seemed ridiculously simple to make. Both of those qualities are exactly what I want when I cook!
Mackenzie dressed her cupcakes up a bit with cookie butter and a pudding topping. Mine had little less frills (a little easier to pack into my gym bag too) and I also used a different filling. But the result was still pretty awesome.

Following Mackenzie's instructions, I started off with a Chocolate Brownie Quest Bar. I then put it in the microwave for about 15seconds to soften it up and I molded half of it to the inside of a cupcake tray slot that had a metal cupcake wrapper inside of it. Next, I put 1tbsp of Nutella (mmm... Nutella) on top and closed the top of the cupcake with the remaining cupcake batter. Finally, I stuck the tray in the oven at 350-degrees F for 10min. That's it!
It is important to note (as Mackenzie said) that you should let the cupcakes cool before eating. Molten Nutella leaves a nasty mouth burn [ouch!]. But you should you decide to store some of the cupcakes for a later time then you should also pop them in microwave for about 30seconds before eating. Otherwise, you will have a Nutella filled brick.
It should also be noted that I think this kind of recipe will work with any flavor Quest bar. So, you could do a cream cheese filling inside a cheesecake Quest bar. Or you could do a butter cream filling inside a cookies and cream Quest bar. The possibilities are literally limitless [and likely very delicious]!
