Crockpot Cajun Tilapia
Those of you who were looking for more simple to make, healthy and delicious entree recipes, today I am answering your request. This is my spin on a crockpot version of cajun court-bouillon. That’s fancy speak for a quick cajun recipe that I cook in a crockpot for half a day. But fancy speak aside, this is one dish that’s sure to make more than one appearance at your dinner table.
Do you love tilapia, or is it just meh? Personally, I think it’s just meh. But this recipe changes that completely. And it’s not just for tilapia. You can make this recipe with other kinds of fish too. Want to add in some shrimp? No problem! This recipe works for that too!
This recipe turns out a little spicy. But If you really want to kick this up a notch, you can toss in a habanero into the mix. I didn’t include that in this recipe because was not the only person eating it. And some people just can’t take the heat. But if it was just for me then I would definitely cut open a habanero and toss it in.
In terms of sides, I think rice is a must. White rice is fine. But yellow Spanish rice is definitely my preference. And while we’re talking cajun, why not plate up some Killer Cajun Sweet Potato Protein Pancakes? Or if that’s too much protein for you then omit the protein from the pancakes and add in a little extra flour.
Ingredients
- 1 Spanish Onion
- 1 Green Bell Pepper
- 1.5tsp Garlic
- 4tbsp I Can’t Believe It’s Not Butter Light
- 1can Traditional Rotel
- 1cup Stock (fish, chicken, or vegetable; I used vegetable)
- 0.5tsp salt
- 1.5lb Tilapia
- 1/2container Emeril’s Cajun Spices
- 2tbsp Roux
Directions
- Chop up the onions and bell pepper and sauté them with the garlic and butter in a pan until they start to brown.
- Coat the tilapia filets with the Cajun spices.
- In a bowl, mix the remaining ingredients together.
- Mix the sautéed onion, bell pepper and garlic into the mixture in the bowl.
- Lightly coat the bottom of the crockpot with some of the mixture in the bowl.
- Put the cajun coated tilapia into the crockpot.
- Pour the remaining mixture in the bowl on top of the tilapia.
- Cook in the crockpot for 6-8hrs on low with the lid on.
- Plate it onto some rice and enjoy!
