Killer Cajun Sweet Potato Protein Pancakes
Who doesn't love pancakes?!?
When
I was cutting fat for competition last summer, one of my favorite
re-feed day meals was sweet potato pancakes with sugar free syrup. This
recipe is a spin off from my traditional sweet potato pancake recipe
that is lower in fat and higher in protein (and higher in sweet potato
awesomeness). It's a great all around meal for almost any kind of diet.
And it tastes great too!
Ingredients
- 8oz Sweet Potatoes
- 4tsp baking powder
- 1tsp salt
- 1tsp nutmeg
- 2tsp cinnamon
- 4tbsp reduced fat butter
- 1cup skim milk
- 1cup all purpose flour
- 4scoops vanilla whey protein
- 6tbsp liquid eggs
Directions
- Peel and dice sweet potatoes
- Boil diced sweet potatoes for 10min or until they are soft all the way through
- Mash the sweet potatoes with a fork in a bowl
- Add the remainder of the ingredients to the bowl and mix well into a batter
- Grease a skillet with nonfat cooking spray on medium heat
- Using a ladle or a large spoon scoop some batter into a dollop in the skillet
- When the edges are firm and bubbles start to form on the top of the pancake, flip it over with a spatula
- After 20secs to 1min, take the pancake off of the skillet and place on a plate with the spatula
- Repeat until all the batter is used

that these pancakes are really something special. They are simple,
delicious, and packed with protein! What could start the morning off
better? Or heck, have them for dinner! Sweet potato protein pancakes and
catfish has become a staple at my house. ;)
